Jamaican Pork Tenderloin Salad

Ingredients
For the salad, the ingredients needed are 1 pound of pork tenderloin, cooking spray, 4 cups of salad greens, 2 cups of chopped pineapples and 1 cup of chopped papayas. For the dressing, the ingredients needed are 1 clove of garlic, 2 tablespoons of fresh thyme leaves, 2 tablespoons of lime juice, 1 tablespoon of olive oil, 1 tablespoon of minced ginger, 2 teaspoons of brown sugar, 1/2 teaspoon of ground allspice, 1/2 teaspoon of ground cinnamon, 1/2 teaspoon of salt, 1/4 teaspoon of ground black pepper, and 1/4 teaspoon of ground nutmeg.
Preparation
For the dressing, mix the garlic, fresh thyme leaves, lime juice, olive oil, minced ginger, brown sugar, ground allspice, ground cinnamon, salt, ground black pepper, and ground nutmeg in food processor. Process the ingredients until finely ground.
Slice the pork lengthwise. Cut to, but not through, the other side of the pork. With open halves, lay down the pork and rub 2 tablespoons of the dressing on it. Set aside the remaining dressing for later.
Cooking
Coat the grill grates with cooking spray, and putt the pork on the grill. Cook for 10 minutes per side, and let it stand for 5 minutes. Before serving, cut the pork into 1/4-inch thick slices, and toss it with the remaining dressing. On a plate, lay down the salad greens, pineapple and papaya with the pork.
